  • 68 jalapeño peppers
  • Olive oil
  • 5 oz Mexican chicken sausage
  • 5 oz queso asadero cheese (coarsely grated)
  • 68 corn tortillas
  • Chopped fresh cilantro (for garnish)
  • Kosher salt (to taste)

Instructions

  1. In a medium saucepan, boil water and add the jalapeño peppers. Simmer for 5 minutes until softened, then cool in the water.
  2. Heat olive oil in a skillet over medium heat and cook the chicken sausage until browned.
  3. Cut a small slit in each jalapeño and remove seeds carefully.
  4. Stuff each pepper with cheese and chicken sausage mixture, then place on a baking sheet.
  5. Broil for 2-5 minutes until cheese is melted. Serve warm garnished with cilantro.
