- 5 oz Mexican chicken sausage
- 5 oz queso asadero cheese (coarsely grated)
- 6–8 corn tortillas
- Chopped fresh cilantro (for garnish)
- Kosher salt (to taste)
- In a medium saucepan, boil water and add the jalapeño peppers. Simmer for 5 minutes until softened, then cool in the water.
- Heat olive oil in a skillet over medium heat and cook the chicken sausage until browned.
- Cut a small slit in each jalapeño and remove seeds carefully.
- Stuff each pepper with cheese and chicken sausage mixture, then place on a baking sheet.
- Broil for 2-5 minutes until cheese is melted. Serve warm garnished with cilantro.
