  • 150 g granulated sugar
  • 150 g dark brown sugar
  • 4 large eggs (room temperature)
  • 330 g all-purpose flour
  • 1 tbsp cornstarch
  • 1 tbsp ground cardamom
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • ½ tsp ground allspice
  • ½ tsp ground nutmeg
  • ¼ tsp ground black pepper
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 240 g sour cream (room temperature)
  • 60 g vegetable oil (e.g. canola oil)
  • 1 1/2 tsp vanilla extract
  • 200 g butter (for frosting)
  • 280 g powdered sugar
  • 30 g dark brown sugar
  • 115 g full-fat cream cheese (room temperature)
  • 1/2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream together butter and sugars until light and fluffy.
  4. Add eggs one at a time to the butter mixture. Then mix in sour cream and vegetable oil until combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  7. For the frosting: Beat together room-temperature butter and cream cheese until smooth. Gradually add powdered sugar and dark brown sugar until fully combined.
  8. Once cooled, layer the cakes with frosting in between and cover the top and sides as desired.
