  • 12 cups cubed French bread
  • 3 pears (peeled and diced)
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tbsp brown sugar
  • 2 tsp ground cardamom (divided)
  • ¾ cup heavy whipping cream (for syrup)
  • 1 ½ cups sugar (for syrup)
  • ¼ cup water
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom
  • 2 tbsp raw turbinado sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt butter over medium heat. Sauté diced pears with brown sugar and 1 teaspoon of cardamom until tender; set aside.
  3. In a mixing bowl, whisk together eggs, milk, heavy cream, sugar, salt, and remaining cardamom. Fold in sautéed pears.
  4. Add cubed bread to the custard mixture and let sit for about 10 minutes.
  5. Transfer to a greased baking dish, sprinkle with raw turbinado sugar if desired, and bake for about 60 minutes until golden brown.
  6. For the syrup, simmer cream, cardamom pods, sugar, water, and butter until slightly thickened; stir in orange juice and zest.
  7. Serve warm drizzled with cardamom syrup.
