  • 5 strips of thinly sliced turkey
  • 8 oz farfalle (bow tie pasta)
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400F. Arrange turkey slices on a foiled baking sheet and bake for about 10-12 minutes until crispy.
  2. Dice the baked turkey into bite-sized pieces.
  3. In a large pot of boiling water, cook farfalle according to package instructions. Drain and rinse under cool water.
  4. Whisk together olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and black pepper in a bowl.
  5. In a large mixing bowl, combine cooked pasta with vinaigrette, diced turkey slices, halved cherry tomatoes, mozzarella balls, and fresh basil. Toss gently and serve immediately or chill before serving.
