- 12 oz smoked sausage (Andouille or Kielbasa)
- 1 cup long-grain white rice
- 1 ½ cups chicken broth
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- Heat olive oil in a skillet over medium heat. Sauté the diced onion until translucent (3-4 minutes). Add minced garlic and diced bell peppers; cook until tender (3-5 minutes).
- Add sliced smoked sausage and brown for about 5 minutes.
- Stir in rinsed rice and pour in chicken broth. Add Cajun seasoning, salt, and pepper to taste; bring to a boil.
- Reduce heat to low, cover the skillet, and simmer for 15-20 minutes until rice is cooked through.
- Fluff rice with a fork before serving. Garnish with fresh parsley or green onions if desired.
