  • 12 oz smoked sausage (Andouille or Kielbasa)
  • 1 cup long-grain white rice
  • 1 ½ cups chicken broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the diced onion until translucent (3-4 minutes). Add minced garlic and diced bell peppers; cook until tender (3-5 minutes).
  2. Add sliced smoked sausage and brown for about 5 minutes.
  3. Stir in rinsed rice and pour in chicken broth. Add Cajun seasoning, salt, and pepper to taste; bring to a boil.
  4. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes until rice is cooked through.
  5. Fluff rice with a fork before serving. Garnish with fresh parsley or green onions if desired.
