  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water (110°F)
  • 4 oz button mushrooms (sliced)
  • 2 Tbsp plant-based butter
  • 1/2 cup shallots (or red onion, thinly sliced)
  • 45 cloves garlic (sliced)
  • 2 Tbsp cooking apple juice
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup jarred pesto sauce
  • 1 cup Green Pesto Gouda cheese
  • Mixed fresh herbs for garnish

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and yeast.
  2. Mix squid ink with warm water and gradually add to the dry ingredients. Stir in olive oil and knead on a floured surface until smooth.
  3. Place dough in a greased bowl, cover with a towel, and let rise until doubled in size (about 1 hour).
  4. While dough rises, prepare mushroom topping: sauté shallots in plant-based butter until translucent, then add garlic and mushrooms along with apple juice and thyme; season to taste.
  5. Preheat oven to 450°F (230°C). Divide dough into four portions; roll each out to about ¼ inch thick.
  6. Transfer rolled dough to parchment-lined baking sheets; spread pesto sauce on each base. Top with mushroom mixture and cheese.
  7. Bake for 12–15 minutes until golden brown.
