  • 2 large lamb shanks
  • 1 large bunch fresh rosemary
  • 8 garlic cloves
  • 2 cinnamon sticks
  • 1 small bunch thyme
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 tablespoon smoked paprika
  • 4 cups chicken stock
  • 3 bay leaves
  • Salt and pepper, to taste
  • 1 cup fresh plum tomatoes, chopped

Instructions

  1. Prepare the ingredients by chopping the vegetables.
  2. In a Dutch oven over medium-high heat, sear the lamb shanks until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, add onions, celery, carrots, garlic, cinnamon sticks, rosemary, thyme, smoked paprika, and bay leaves. Cook until fragrant (about 5 minutes).
  4. Return the lamb shanks to the pot with chopped tomatoes and season with salt and pepper. Pour in chicken stock until just covering the meat.
  5. Cover and reduce heat to low; simmer for 2-3 hours until tender.
  6. Let rest before serving alongside crusty bread or creamy mashed potatoes.
