  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • Fresh rosemary and thyme sprigs
  • 2 bay leaves

Instructions

  2. 2. Heat olive oil in a Dutch oven over medium-high heat. Sear each shank until browned on all sides (about 4-5 minutes per side). Remove and set aside.
