  • 3 ¼ cups (406 g) all-purpose flour
  • 2 teaspoons kosher salt
  • 2 cups (296 g) fresh blueberries, divided
  • 1 tablespoon granulated sugar
  • ½ teaspoon cornstarch
  • 1 teaspoon cold water
  • 1 teaspoon lemon juice
  • 1 pinch kosher salt
  • 6 tablespoons unsalted butter, melted
  • 1 cup (200 g) light brown sugar, packed
  • 2 teaspoons cinnamon
  • ½ teaspoon kosher salt
  • 4 ounces (½ package) cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • â…” cup (83 g) confectioners' sugar
  • 1 tablespoon whole milk, or more as needed for desired consistency

Instructions

  1. Prepare the Dough: Combine warmed milk, water, and melted butter in a mixing bowl. Stir in sugar until dissolved, then sprinkle yeast over the mixture and let it froth for about 5 minutes. Mix in flour and salt until a dough forms, then knead on a floured surface until smooth.
  2. Let It Rise: Place the dough in a greased bowl, cover, and let rise in a warm area for about 1 hour or until doubled in size.
  3. Make Blueberry Sauce: In a saucepan over medium heat, combine half the blueberries with sugar. Gently stir until berries break down; add cornstarch mixed with cold water, lemon juice, and salt. Cook until thickened; set aside to cool.
  4. Shape and Assemble: Preheat your oven to 350°F (175°C). Punch down the risen dough and divide into small pieces. Roll each piece into balls; dip in melted butter then coat with brown sugar mixed with cinnamon. Layer half of the coated balls in your baking dish, add half of the blueberry sauce, repeat layers.
  5. Bake: Bake for about 40 minutes or until golden brown on top. Cool slightly before inverting onto a cooling rack.
  6. Drizzle with Glaze: Beat softened cream cheese and butter together; gradually mix in confectioners' sugar and enough milk to achieve desired consistency. Drizzle over warm monkey bread before serving.
