  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 ounces cream cheese
  • 3 cups blueberries
  • 2 large eggs
  • Zest and juice of one lemon

Instructions

  1. Preheat your oven to 350°F (177°C) and line an 8" x 8” baking pan with foil.
  2. In a mixing bowl, combine melted butter, flour, sugar, salt, and lemon zest. Press into the bottom of the prepared pan.
  3. Using an electric mixer, beat softened cream cheese and sugar until smooth. Add eggs one at a time; mix in yogurt (or sour cream), lemon juice, and zest until combined.
  4. Gently fold in blueberries with a rubber spatula and pour over the crust.
  5. Bake for 30-35 minutes until the edges are set but the center is slightly jiggly.
  6. Allow to cool completely before slicing into squares.
