  • 12 oz. farfalle pasta noodles
  • 10 slices turkey bacon (cooked crisp and then broken into pieces)
  • 1 pint cherry tomatoes (quartered)
  • 2 cups baby spinach
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 cup ranch dressing
  • 1 heaping tbsp. mayonnaise (can sub sour cream or Greek yogurt)
  • 2 tsp. dijon mustard
  • 2 tsp. Italian dressing

Instructions

  1. Cook the farfalle pasta according to package instructions until al dente. Drain and let cool slightly.
  2. In a large mixing bowl, combine quartered cherry tomatoes and cooked turkey bacon pieces.
  3. In a small bowl, whisk together ranch dressing, mayonnaise (or sour cream/Greek yogurt), dijon mustard, and Italian dressing until smooth.
  4. Add cooled pasta to the tomato and turkey bacon mixture. Pour half of the dressing over the salad and stir well to combine.
  5. Cover with plastic wrap and chill in the refrigerator for at least one hour.
  6. One hour before serving, gently fold in baby spinach and add remaining dressing. Season with salt and pepper to taste.
