  • 3/4 cup Biscoff cookie butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup all-purpose flour

Instructions

  1. Preheat your oven to 350 F (180 C). Line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together sugars, eggs, and vanilla extract.
  3. Melt butter and chocolate chips together until smooth; mix in cocoa powder.
  4. Combine the melted mixture with the egg mixture until just combined.
  5. Gently fold in flour, espresso powder, and sea salt until blended.
  6. Pour half of the batter into the prepared pan, then layer with chilled Biscoff cookie butter. Top with remaining batter.
  7. Press Biscoff cookies on top and drizzle warmed cookie butter over them.
  8. Bake for 30-40 minutes or until a toothpick comes out with moist crumbs.
