  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree with granulated sugar and brown sugar. Beat in eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  5. In another bowl, beat cream cheese with granulated sugar, egg yolk, and vanilla extract until smooth.
