  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 1/2 teaspoon ground black pepper
  • 3 pounds chicken thighs, legs, or breasts

Instructions

  1. In a mixing bowl, combine orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, sea salt, and black pepper. Whisk until blended.
  2. Place chicken in a resealable bag or dish; pour marinade over it and refrigerate for at least 30 minutes (ideally overnight).
  3. Preheat grill to medium-high heat (or oven to 400°F). Remove chicken from marinade and discard excess marinade.
  4. Grill chicken for about 20–25 minutes per side or roast in the oven for approximately 40 minutes until the internal temperature reaches 165°F.
  5. Let rest for 5–10 minutes before slicing and serve with lime wedges and chopped cilantro.
