  • 250 g caster sugar
  • 1 teaspoon vanilla extract
  • 4 medium eggs
  • 250 g self-raising flour
  • 3 tablespoons milk
  • Zest of 1 orange
  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice
  • 12 tablespoons orange zest

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10-inch baking tin with baking paper.
  2. In a mixing bowl, whisk together softened butter and caster sugar until light and fluffy. Stir in vanilla extract.
  3. Gradually add eggs while whisking until well combined. Sift in self-raising flour and mix in the milk until smooth. Finally, stir in the orange zest.
  4. Pour the batter into the prepared tin, spreading evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
