  • 25 chocolate cookies (~285g)
  • 5 tbsp unsalted butter (~70g), melted
  • 250g dark chocolate
  • 1 ½ cups heavy cream (360g), chilled
  • 24 oz cream cheese (680g), room temperature
  • 1 cup granulated sugar (200g)
  • ½ tsp salt

Instructions

  1. Brush a 9″ springform pan with butter and optionally line the bottom with parchment paper.
  2. In a food processor, blend chocolate cookies with melted butter until crumbly. Press into the bottom of the prepared pan and refrigerate.
  3. Melt dark chocolate with ¾ cup heavy cream over a double boiler, then cool slightly.
  4. In another bowl, mix room temperature cream cheese, sugar, and salt until creamy.
  5. Combine cooled ganache with cream cheese mixture, mixing gently.
  6. Whip remaining heavy cream until stiff peaks form, then fold into the cheesecake mixture.
  7. Spread filling over crust and refrigerate overnight or at least six hours.
  8. Serve chilled, optionally topped with whipped cream or chocolate sauce.
