  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate
  • 3 tbsp corn syrup
  • 8 oz cream cheese
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In one bowl, mix together the flour, baking powder, baking soda, sugar, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, sour cream, cocoa powder, instant coffee, and boiling water until smooth.
  4. Gradually add wet ingredients to dry ingredients using an electric mixer until just combined.
  5. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. While cooling, prepare frosting by melting dark chocolate with corn syrup and mixing with cream cheese and whipped cream.
  7. Once cooled, frost the cake layers generously.
