  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt (more for a larger filet)
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional, to taste)
  • 1 teaspoon honey
  • 2 tablespoons lime juice + 1 teaspoon lime zest
  • salt to taste
  • 1 1/2 cups of rice

Instructions

  1. In a mixing bowl, combine the diced mangoes, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, lime zest, and salt. Toss all ingredients in the bowl to combine thoroughly. Taste and adjust seasoning if needed.
  2. Follow the package instructions for cooking your rice. This will serve as a hearty base for your salmon bowls.
  3. Preheat your oven to 475 degrees Fahrenheit. Alternatively, set it to broil at 500 degrees if you prefer a crispy top on your salmon.
  4. Line a baking sheet with foil for easy clean-up. Mix together brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, and olive oil in a small bowl to form a paste.
  5. Place the salmon skin side down on the baking sheet. Rub the spice paste liberally over the top part of the salmon.
  6. Bake in preheated oven for 6-12 minutes based on thickness and desired doneness. Keep an eye on it if broiling!
  7. Once cooked, remove the salmon from the oven. Pile up some rice in bowls or plates. Flake off pieces of salmon onto each serving and spoon generous amounts of mango avocado salsa over everything.
