  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to create the bang bang sauce.
  2. Heat oil in a skillet over medium-high heat and cook diced chicken until browned; set aside.
  3. Scramble the beaten eggs in the same skillet and remove when just set.
  4. Sauté diced carrots and minced garlic until softened; add green peas and stir for another minute.
  5. Add cold rice to the pan, stir-frying on high heat until heated through and slightly crispy.
  6. Combine cooked chicken and scrambled eggs back into the pan; stir well.
