  • 1/4 cup coconut oil, melted
  • 2 tablespoons almond milk or dairy milk
  • 1 egg
  • 3/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with parchment paper liners.
  2. In a large bowl, mash the bananas until smooth and mix in honey and melted coconut oil.
  3. Beat in the egg, then add almond milk, Greek yogurt, and vanilla extract until well combined.
