  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise (optional)
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Pat the cod fillets dry and brush both sides with olive oil. Season with salt, pepper, garlic powder, and paprika if desired. Place on the prepared baking sheet.
  4. Bake in the oven for about 12–15 minutes until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. While the fish is baking, whisk together Greek yogurt, mayonnaise (if using), dill, lemon juice, lemon zest, Dijon mustard, and minced garlic in a mixing bowl. Season with salt and pepper to taste.
  6. Chill the sauce until ready to serve.
  7. Once baked, let the cod rest for one minute before serving with the lemon-dill sauce drizzled over or on the side.
