  • 1 1/3 cup refried beans
  • 1 1/3 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 green onions (chopped)
  • 23 jalapeños (diced)
  • 68 large flour tortillas
  • 3 tablespoons butter (melted)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine shredded chicken, refried beans, salsa, cheese, green onions, and jalapeños; mix well.
  3. For each tortilla, place about ½ cup of filling in the center. Fold up the bottom edge over the filling, tuck in the sides tightly, then roll to form a burrito shape.
  4. Place seam-side down on a baking sheet and brush generously with melted butter.
