  • 1 pound turkey sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the turkey sausage, cooking until browned (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté diced onion, carrots, and celery until tender (about 5 minutes). Stir in garlic and Italian seasoning, cooking until fragrant.
  3. Pour in chicken broth and diced tomatoes; return sausage to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  4. Add tortellini; cook according to package instructions (7-9 minutes), then stir in spinach until wilted.
