  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss cubed butternut squash with olive oil, salt, and pepper; roast for 15-20 minutes until tender.
  3. Prepare Brussels sprouts similarly on a separate baking sheet; roast for 20-30 minutes until golden.
  4. Boil salted water and cook bow tie pasta until al dente; reserve some pasta water before draining.
  5. In a large skillet, heat olive oil over medium heat and brown sliced sausage; set aside.
  6. In the same skillet, add minced garlic and butter; stir until fragrant.
  7. Combine cooked pasta with the garlic butter, then mix in roasted vegetables, sausage, smoked paprika, and thyme.
