  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Stir in tomato paste and cook until caramelized.
  4. Deglaze with a bit of beef broth, then add back the browned beef along with remaining broth.
  5. Incorporate carrots, potatoes, parsnips, and celery. Season with herbs and spices.
  6. Bring to a boil; reduce heat to low and cover. Simmer for about 2 hours until the beef is tender.
