  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 teaspoons red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1.5 lbs beef chuck, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon white vinegar or lemon juice
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. In a small bowl, mix all spices to create the Madras spice blend.
  2. Heat oil in a large pan over medium heat and sauté onions until golden brown.
  3. Add garlic, ginger, and optional dried red chilies; stir for 1-2 minutes.
  4. Increase heat and brown the beef for about 5-7 minutes.
  5. Add the spice mix and toast for 30 seconds before adding pureed tomato, tomato paste, salt, black pepper, and vinegar; cook for another 5 minutes.
  6. Pour in the broth or water; bring to a boil then reduce heat to low. Cover and let simmer for 60-75 minutes.
  7. Adjust seasoning if needed; garnish with fresh cilantro before serving hot.
