  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions, sliced (whites and greens separated)
  • 10 cups water
  • 8 oz dried ramen noodles or curly noodles
  • 1 cup carrots, cut into matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Kosher salt and pepper to taste

Instructions

  1. Gather all ingredients and chop garlic, ginger, scallions, and carrots.
  2. In a large pot, combine chicken thighs and water. Bring to a boil over medium-high heat, then reduce to low and simmer for about 15 minutes until chicken is fully cooked.
  3. Remove chicken from pot. Add garlic, ginger, scallion whites, carrots, salt, and pepper to the broth. Simmer for an additional 5 minutes.
  4. Stir in noodles and cook according to package instructions until tender.
  5. Shred the chicken into bite-sized pieces and return to the pot along with soy sauce, black rice vinegar, toasted sesame oil, and crispy chili oil if desired.
  6. Serve hot in bowls garnished with scallion greens.
