  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 cups apple vinegar
  • 2 cups beef stock
  • 4 sprigs fresh thyme
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper, to taste
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Brown the shanks on all sides for about 5 minutes each, then remove them and set aside.
  2. In the same pot, sauté sliced onions, garlic, carrots, and celery until softened (about 5–7 minutes).
  3. Stir in tomato paste and cook for an additional minute. Pour in apple vinegar, scraping up browned bits from the pot. Add beef stock along with thyme and rosemary.
  4. Return the browned lamb shanks to the pot, bring to a simmer, cover with a lid, reduce heat to low, and braise for about 2 hours or until fork-tender.
  5. Remove from heat and let rest briefly before serving warm with generous spoonfuls of sauce.
