  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef or lamb broth
  • Fresh rosemary
  • Fresh thyme
  • Bay leaves

Instructions

  1. 1. Heat olive oil in a heavy-duty Dutch oven over medium-high heat. Season lamb shanks with salt and pepper; sear until browned on all sides. Remove and set aside.
  2. 2. In the same pot, sauté onion, garlic, carrots, and celery until softened. Stir in tomato paste and cook for an additional minute.
  3. 3. Deglaze with apple vinegar while scraping up browned bits from the bottom of the pot; simmer for about 2 minutes.
  4. 4. Return lamb shanks to the pot. Add broth along with herbs; bring to a gentle simmer.
  5. 5. Cover and place in preheated oven at 325°F (160°C). Braise for 2 to 3 hours or until fork-tender.
  6. 6. Remove from oven, discard herbs, and serve with your choice of sides.
