2 kg apples (Fuji, Royal Gala, or Pink Lady)
150 g granulated sugar (for apple filling)
150 g granulated sugar (for custard)
4 egg yolks
600 ml milk (dairy or plant-based)
2 tbsp cornstarch
2 tsp vanilla bean paste

Instructions
Preheat oven to 180°C (350°F). Wash, core, and slice apples thinly. Toss sliced apples with 150 g sugar and salt in a bowl.
Cook the apple mixture in a saucepan over medium heat for 15-20 minutes until softened. Set aside to cool.
In a bowl, whisk together egg yolks, 1 tbsp cornstarch, and 50 g sugar until smooth. Heat milk until just boiling; gradually whisk into egg mixture.
Pour mixture back into the saucepan and cook on low heat until thickened (5-10 minutes). Stir in vanilla bean paste and salt.
In a mould, layer one-third of cooked apples at the bottom, followed by half of the custard. Repeat and finish with another layer of apples.
Chill in the refrigerator for at least two hours before serving.
