  • 17 g plain flour for crumble
  • 1/8 tsp cinnamon for crumble
  • 175 g unsalted butter (softened) for batter
  • 175 g light brown soft sugar for batter
  • 3 large eggs for batter
  • 175 g self-raising flour for batter
  • 1/2 tsp cinnamon for batter
  • 1/4 tsp mixed spice for batter
  • 175 g unsalted butter (softened) for frosting
  • 350 g icing sugar for frosting
  • 1 1/2 tsp cinnamon for frosting
  • 23 tbsp milk for frosting

Instructions

  1. Prepare the apple filling by chopping apples and cooking them with light brown sugar, cornflour, cinnamon, and mixed spice until soft. Cool completely.
  2. Make the crumble by mixing plain flour, light brown sugar, cinnamon, and butter; bake until golden.
  3. Bake the cupcakes by creaming together softened butter and sugar, adding eggs one at a time, then gently folding in self-raising flour and spices before baking until golden.
  4. Assemble by cooling the cupcakes entirely, filling them with apple filling, frosting with cinnamon buttercream, and topping with crumble.
