  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9 x 4 inch baking tin and line it with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a separate bowl, cream butter and sugar until fluffy. Incorporate eggs one at a time followed by vanilla.
  4. Gradually add half of the dry ingredients to the wet mixture; alternate with buttermilk until just combined.
  5. Toss diced apples with brown sugar and cinnamon; fold into the batter.
  6. Pour half the batter into the prepared tin, layer half of the apple mixture, swirl gently. Top with remaining batter and apples.
  7. Bake for 55 – 65 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes before transferring to a rack to cool completely.
