  • 2 cups apple cider (reduced to 1/4 cup)
  • ½ cup unsalted butter (room temperature)
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • For filling options: Brown Sugar Cream Cheese Icing or Vanilla Buttercream

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium saucepan, boil the apple cider and simmer until reduced to about 1/4 cup. Allow it to cool.
  2. In a bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a separate large bowl, cream together the butter and sugars until fluffy. Add vanilla and eggs one at a time. Mix in the cooled apple cider and apple butter.
  4. Gradually mix in the dry ingredients until just combined.
  5. Scoop tablespoon-sized mounds onto parchment-lined baking sheets and bake for 11-13 minutes until they spring back when touched.
  6. Cool slightly before coating in cinnamon sugar and then fill with your choice of icing.
