  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • Mulling spices
  • 27 oz cream cheese (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Boil the apple cider with mulling spices until reduced to about 1/3 cup. Let cool.
  2. Preheat oven to 350°F (175°C) and prepare the crust by combining cookie crumbs, melted butter, salt, and powdered sugar; press into a springform pan and bake for 10 minutes.
  3. Lower the oven temperature to 325°F (165°C). In a stand mixer, combine softened cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, salt, cinnamon, and reduced cider; mix well before incorporating eggs one at a time followed by flour.
  4. Pour filling into the cooled crust and bake in a water bath for about 90 minutes until edges are set but the middle is slightly wobbly.
  5. Allow cheesecake to cool gradually in the oven with the door cracked open for about 30 minutes before refrigerating for at least 8 hours.
