  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 6 oz cream cheese
  • 2 egg yolks
  • 3 tbsp granulated white sugar
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 1/4 cup granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 1/4 cup; let cool.
  2. Beat cream cheese with sugar and vanilla until smooth; refrigerate.
  3. Whisk flour, baking powder, baking soda, salt, and spices in a bowl.
  4. Cream butter with sugars; add egg yolks and cooled cider reduction.
  5. Incorporate dry ingredients until just combined.
  6. Preheat oven to 350°F (175°C). Form balls of dough around cheesecake filling.
  7. Bake for about 11 minutes until edges are golden.
