  • 3 thinly sliced apples
  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1 cup pecan halves
  • 2 Tbsp maple syrup (for pecans)
  • 3 Tbsp balsamic vinegar
  • 1/2 cup olive oil
  • 1 tsp lemon juice
  • 1 garlic clove (minced)
  • 1/2 tsp pepper
  • pinch of sea salt

Instructions

  1. Preheat your oven to 350°F.
  2. Toss pecans with 2 tablespoons of maple syrup and a pinch of sea salt. Spread on a parchment-lined baking sheet and roast for about 5-7 minutes until toasted. Let cool.
  3. In a bowl, whisk together remaining maple syrup, olive oil, lemon juice, balsamic vinegar, minced garlic, pepper, and sea salt to taste.
  4. In a large salad bowl, layer arugula, sliced apples, figs, red onion, roasted pecans, and goat cheese. Drizzle half the dressing over the top and toss gently.
