  • 500g sweet potato
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 1/4 cups plain flour
  • 50g chicken sausage, casing removed and diced (optional)
  • 4 tablespoons butter
  • 3 garlic cloves, crushed
  • 1 sprig of rosemary, stem removed
  • 1 teaspoon flaky salt
  • Grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the sweet potatoes in half, brush with olive oil, and place them cut-side down on a lined baking tray. Roast for about 30 minutes until tender.
  2. Once cooled, scoop out the sweet potato flesh into a large bowl and mix with ricotta, parmesan, salt, and nutmeg until combined.
  3. Gradually add flour until the dough is manageable but not sticky.
  4. Roll the dough into logs and cut them into bite-sized pieces.
  5. Boil water in a large pot; cook gnocchi until they float (about 2 minutes).
  6. In a pan, melt butter over medium heat to create brown butter. Add cooked gnocchi and toss to combine with minced garlic and rosemary.
